Oatmeal Pancakes

Oatmeal Pancakes brought to you by Wholesome Productions

(Makes 6 pancakes)

These pancakes have a beautiful soft texture and are lovely when eaten warm. In summer they are delicious with blueberries but they are good all year round topped with plain yoghurt and a dash of maple syrup. Yum!

Ingredients
¾ cup traditional rolled oats
1 cup water
½ cup plain flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¾ cup skim milk
1 cup of fresh blueberries
Plain yoghurt
Maple syrup

Method
1. Combine oats with 1 cup of water and cook either conventional or microwave method according to package directions.
2. Combine flour, baking powder, salt and cinnamon in a medium bowl. Mix egg and milk in another medium bowl. Add flour mix to egg mix; stir until well blended. Stir in cooked oatmeal.
3. Heat pan; grease if desired. Pour batter by 1/3 cupfuls into medium heated pan. Cook pancakes for about 2 minutes until little holes appear on the uncooked side. Before turning add a few fresh blueberries to each pancake. Turn and cook for approximately 2 more minutes or until golden brown.
4. We like the pancakes topped with plain yoghurt, the rest of the blueberries and a dash of real maple syrup.
