Banana & Date Cake

Ingredients
1 cup dates, roughly chopped
1 ½ teaspoons baking soda
1 cup boiling water
2 1/3 cups self raising wholemeal flour
½ teaspoon crème of tartar
1 teaspoon cinnamon
½ teaspoon nutmeg
3 medium bananas, mashed
1 ½ cups honey
1 teaspoon vanilla extract
4 egg whites
Method
1. Pre heat the over to 180C and lightly grease a 24cm non stick cake tin with removable sides.
2. Put the dates and ½ teaspoon of the baking soda in a food processor. With the motor running add the boiling water and continue to process until the dates are smoothly pureed. Set aside.
3. Sift the flour, remaining baking soda, crème of tartar and the spices in a bowl.
4. Combine the mashed banana, honey and vanilla in a large bowl. Stir through the flour mixture until just combined then stir through the date puree.
5. Beat the egg whites until they form soft peaks. Use a large metal spoon to fold the egg whites through the batter until just combined. Do not over beat.
6. Spoon into the prepared tin and bake for 50-55 minutes or until a skewer inserted in the centre comes out clean.
